    JZT Ferments: A Success Story Made in Prague

    Three friends united by a passion for good food and drink embark on a journey

    JZT Ferments from Prague specialises in producing high-quality fermented tea, more commonly known as Kombucha. Founded five years ago by three friends who share a passion for good food and drink, the company has quickly made a name for itself in Prague and continues to delight an ever-growing number of people with its unique Kombucha varieties.

    JZT Ferments was founded by three young men—Jirka, Zdeněk, and Tomáš—who have known each other since childhood. They bonded over their shared love of good food and drink. Their first encounter with Kombucha came during their time studying in North America, where they became completely captivated by it. Upon returning to the Czech Republic, they searched for something similar but found nothing that matched the quality they had enjoyed abroad.

    It wasn’t until Jirka managed to brew his own Kombucha—one finally on par with those they had tasted across the Atlantic—that the path for JZT was set. One rainy morning, over breakfast in one of their favourite cafés in Prague, the three of them decided to brew Kombucha on a larger scale and turn it into a business.

    After years of hard work, their fan base continues to grow, as does the number of bottles sold. Their old production facility near Flora could no longer meet demand, so they had to move to a new, larger location just outside Prague, in Zdiby.

    “Our new brewery is now located in Zdiby, and we recently put our bottling line into full operation,” says Zdeněk Šafařík, one of the founders, in an interview with Prague Daily News (PD).

    In Prague, you’ll find the team—now joined by a new member, Tereza—at the city’s farmers markets, including every Saturday at the Náplavka farmers’ market. Their products are also available in numerous cafés and restaurants, as well as online at Rohlik.cz.

    “From the beginning of April, customers can find us again at the Saturday farmers’ market around town. They can also order online through our own e-shop or buy our Kombucha on Rohlik.cz,” Zdeněk says to PD.

    Their innovative approach to products has led them to create new flavours that are completely unique to the market. One of their ideas was a special hops-flavoured version of Kombucha, aimed at those who enjoy a hint of beer flavour in a refreshing, non-alcoholic drink. There are many more flavours to explore.
